Our flavor expedition sets off at the humble abode of Dalia, a passionate farmer and skilled traditional cook who cherishes the criollo corn as a priceless treasure. Together, we will unearth the time-honored secrets and tastes of Oaxaca, while gaining a deeper appreciation for the essential role of corn seed preservation, both nutritionally and culturally.

We'll then journey to an authentic family-run palenque, where the time-honored art of mezcal production comes alive before our eyes. Four brothers, guardians of a new generation of mezcaleros, expertly navigate the delicate balance between honoring tradition and addressing the environmental challenges accompanying mezcal's skyrocketing global demand.
